I've added a new project example to the README: pdf2text-ocr

It's a simple tool for converting PDF to text using OCR that uses the latest version of Tesseract.js.

I've created it to help a friend who was getting gibberish when copying text from some PDFs at work.

Can you add a license to your repo (ideally Apache License 2.0, which is the license we use here)? The purpose of that section of the README is for developers to find repos to use as a starting point for their own projects, so anything we link to needs to be permissively licensed.
